Two facts about Indian chilli, both verifiable, both essential.

Chilli was India’s top exported spice in FY 2024-25 at USD 1,342.52 million — 27% of the entire spice export basket, ahead of cumin at USD 732 million. India holds over 34% of world production, ships more than 500,000 tonnes a year, and Guntur’s Mirchi Yard is the largest chilli market in Asia.

And India is the most notified country of origin in the EU’s alert system for herbs and spices at 23.6% of all notifications — with chilli the single most notified product. Between September 2020 and April 2024, EU authorities found ethylene oxide contamination in 527 products linked to India. In 2024 the UK applied extra control measures to all Indian spice imports.

Meanwhile prices collapsed from ₹28,000 per quintal to below ₹7,000, production fell from 7.94 to around 6 lakh tonnes with a further 20% decline projected, and in 2024-25 export volume rose almost 19% while export value fell.

Three things it tells you that a general spice guide will not

Test at intake, not at shipment. Testing at the port tells you that you already paid for contaminated raw material, processed it and committed a container. Aflatoxin cannot be removed once formed — the decision was made when you accepted a wet lot at the mandi.

Ethylene oxide can fail you without you ever using it. The EU residue definition captures the metabolite 2-chloroethanol at 0.02 mg/kg for chilli. Contact with a treated warehouse, transporter or packaging supplier is enough. Your own abstinence is not sufficient.

The premium tier is roughly double. Conventional whole quotes around EUR 2.15/kg FOB. Organic value-added forms quote around EUR 4.33–4.38. Same crop, same belt — the difference is sterilisation, certification and testing.
